BAKED VICTORIAN FRENCH TOAST

1 cup packed brown sugar
1/3 cup butter
2 tbsp corn syrup
4 slices Texas toast or 6 (3/4 inch) slices French bread
5 eggs
1 1/2 cups milk
1 tsp ground cinnamon
Strawberries, peaches or pears, sliced
Blueberries or raspberries
Confectioners sugar

In a saucepan, cook and stir first 3 ingredients just until butter is melted. Pour brown sugar mixture into an ungreased 13x9 inch baking pan. Arrange bread slices in a single layer on top of brown sugar mixture. If necessary, cut bread slices to fit into a single layer. Set baking dish aside.

In a medium bowl, beat eggs, milk and cinnamon until combined. Pour mixture over bread in baking dish. Cover and refrigerate for 2 hours or overnight. Remove cover from the baking dish. Bake at 350 for 30-35 minutes or until center appears set and the top is lightly browned. Let the toast stand about 10 minutes before serving. Top with desired fruit and/or confectioners sugar.
