10 cups peeled and chopped sweet potatoes
1/4 cup butter
3 Tbsp honey
1/4 tsp ground cinnamon
1/4 tsp salt
In a large Dutch oven, combine potatoes and water to cover. Bring to a boil over medium-high heat. Reduce heat, and simmer for 8-10 minutes, or until potatoes are tender; drain well.
Return potatoes to Dutch oven. Add butter, honey, cinnamon and salt. Beat at medium-low speed with an electric mixer until smooth. Serve hot
makes about 6-8 servings
