Maple-Glazed Pork Chops

4 tsp ancho chili powder
1 tsp salt
2 Tbsp olive oil, divided
6 (10-oz) bone-in pork chops, (1-inch thick)
3 Tbsp balsamic vinegar
1/2 cup maple syrup
1/2 cup chicken broth
garnish: toasted chopped pecans
In a small bowl, combine chili powder and salt; sprinkle evenly over both sides of pork chops.
In a large skillet, heat 1 Tbsp olive oil over medium-high heat. Add 3 pork chops, and cook for 2 minutes per side, or until browned. Reduce heat to medium, and cook for 4-6 minutes, or until done. Repeat procedure with remaining olive oil and pork chops.
In a small skillet, cook balsamic vinegar over medium-high heat until reduced by half. Stir in maple syrup and chicken broth. Cook over medium heat, for 5 minutes, or until thick and syrupy.
Serve pork chops over Mashed Sweet Potatoes with maple glaze. Garnish with pecans, if desired.
