PEACH COBBLER

1 cup sugar
1/2 cup shortening
1 cup milk
1 1/2 cups plus about 2 tbsp flour
1 tsp baking powder
1/4 tsp salt
3 cups sliced fresh peaches
1 cup sugar
2 cups boiling water
3 tbsp butter, cut into small bits

Cream together sugar and shortening. Combine with milk and dry ingredients. Place dough into a well greased 2 quart baking dish and cover with fruit. Sprinkle with sugar and pour boil water over all. Add the butter over all and bake at 350 for 1 hour.
