CHOCOLATE-PEPPERMINT CAKE

8 tbsp butter
1 cup flour
1/2 tsp salt
1/4 tsp baking powder
8 oz dark chocolate, chopped
1 1/4 cups sugar
2 tsp vanilla extract
2 large eggs
1/2 cup low-fat buttermilk

Preheat oven to 350. Butter and flour 8-inch round cake pan. Whisk together flour, salt and baking powder.

In medium saucepan, bring 2 inches water to boil. Place butter and chocolate in large heatproof bowl and set over water. Turn off heat and let stand until melted. Stir to combine. Remove bowl and cool 5 minutes.

Whisk in sugar and vanilla, then eggs and buttermilk until combined. Fold in flour mixture until combined. Pour batter into prepared pan. Bake until cake pulls away from sides, about 45 to 60 minutes. Cool in pan 5 minutes. Run a knife around edge of cake and invert onto a wire rack to cool completely. Set cake on serving platter. Serve cake with whipped cream and chocolate shavings, if desired.
