SALMON BALL

Category: Cheeseballs

1 (8 oz) pkg cream cheese, softened
1 tbsp fresh lemon juice and grated onion
1 tsp prepared horseradish
1/4 tsp salt
1/2 tsp liquid smoke
2 tbsp grated green pepper
1/2 cup grated peeled cucumber, drained
1 (15 oz) can salmon, skins and bones removed
1/2 cup finely chopped fresh parsley

Cream ingredients together except salmon and parsley. Fold in the salmon until well mixed. Chill overnight. Form into a ball and roll in parsley. Chill until ready to serve.

NOTE: Can be make up to 24 hours in advance. Serve with crackers, favorite breads or crudités.
