MASHED POTATO CASSEROLE II

2 cups mashed potatoes
1/2 tsp cup sour cream
Salt, pepper and garlic powder
1 small onion, sliced thin
1 small bell pepper, sliced thin
8 tbsp butter
4 medium whole potatoes, cooked
1 1/2 cups grated sharp cheddar
6 slices bacon, cooked crisp
1 (2.8 oz) can French-fried onions

Preheat oven to 350. Spread mashed potatoes evenly in bottom of casserole dish. Layer sour cream evenly on top. EACH TIME you add a layer sprinkle with seasoning. Sauté onion and pepper in butter; evenly layer on top of sour cream.

Next, layer with 1/2 tsp cup cheddar. Slice potatoes and layer over cheese until top is completely covered with potatoes. Finally, top with remaining 1 cup cheese, crumble bacon and onions and bake for about 25-30 minutes, or until hot.
