HOLIDAY CHEESE TRUFFLES

2 (8 oz) pkg cream cheese, softened
1 (8 oz) pkg sharp cheddar cheese
1 tsp garlic powder
Dash ground red pepper
1/4 cup chopped roasted red pepper and green onion
Savory Crackers
Garnishes: additional shredded cheddar cheese, paprika, sesame seeds or chopped fresh parsley

Beat cheeses and spices until well blended. Divide in half. Add red pepper to one and green onions to the other. Mix each half until well blended. Cover and refrigerate 2-3 hours for flavors to blend. Shape cheese mixtures into 1 inch balls. Roll in one of the garnishes. Cover and refrigerate until ready to serve.
