STUFFED FRENCH TOAST

Thick slices bread
Batter
4 egg yolks
2 whole eggs
1 cup half-and-half
1/2 tsp cinnamon
1/8 cup sugar
Filling
3/4 cup unsalted butter
1 cup packed brown sugar, chopped almonds and pecans
1 tbsp cinnamon
1/8 cup Frangelico and amaretto liqueur
1 orange, juice only
Simply mix together batter ingredients. In a sauce pan, melt butter and gradually add nuts. Saute until they are completely moist. Add remaining ingredients except orange juice and cook until sugar is dissolved. Reduce the sauce until thickened, about 2 minutes. Stir in squeezed orange juice. Allow mixture to cool slightly.
Stuff bread with about 1 tbsp mixture; fold in a triangle and dip in the batter. Grill over medium heat until golden brown, cut in half and dust with confectioners sugar.
