STUFFED CROISSANT FRENCH TOAST

4 croissants
4 oz light cream cheese
2 tbsp strawberry jam
8 strawberries (4 chopped and 4 sliced)
4 eggs
2 tbsp heavy cream
2 tbsp brown sugar
1/2 tsp cinnamon
1/4 cup orange juice
Powdered sugar for garnish
Maple syrup
Slice croissants. Spread each side with mixture of cream cheese and jam, sprinkle with chopped strawberries and put halves back together. Save sliced berries for garnish.
Mix eggs, heavy cream, brown sugar, cinnamon and orange juice. After stuffing the croissants, dip into egg mixture and cook on greased griddle heated to medium, about four minutes per side. Dust each toasted croissant with powdered sugar and top with sliced strawberries. Serve with warm maple syrup.
