BAKED FRENCH TOAST

3 eggs beaten
1/2 cup milk
1/2 tsp ground nutmeg
1/4 tsp salt
2 cups cornflakes or sugar frosted flakes
4 tbsp butter, divided
5 slices bread
6 tsp sugar

Stir together first 4 ingredients until well blended. Place in a shallow bowl. Crumble cornflakes slightly so that each flake is about 1/2 its original size and spread them on a piece of wax paper.

Preheat oven to 250. Dip both sides of bread into the batter, letting excess drip off before pressing bread on both sides into the cornflakes to coat well. Melt 2 tbsp butter in a skillet and fry the bread on each side until golden brown. When done, sprinkle 1 tsp sugar evenly on top of each slice and keep warm in the oven until all is done. Repeat until all the toast is done. Serves 4
