Filling
1/4 cup yellow onion, green and red bell pepper and ham, diced
1 tbsp butter
1 cup salsa

Eggs
3 eggs, beaten
2 tbsp half-and-half or milk
Dash hot pepper sauce, salt and pepper

Saute vegetables in butter until soft. Add 1 cup egg mixture. Cook until egg cooks halfway through on bottom. Flip over and cook rest of the way. Sprinkle with greased cheese, fold over on plate. Serve with salsa.
