CORN BREAD

1 cup yellow cornmeal and flour
1 tsp salt
1 tbsp baking powder
1 cup milk
2 tbsp honey
2 eggs, well beaten
1/3 cup unsalted butter, melted and cooled
1/2 cup corn kernels (fresh or thawed frozen)

Preheat an oven to 400. Grease an 8-inch square baking pan with butter. In a large bowl, mix together the cornmeal, flour, salt and baking powder. In a large measuring cup, whisk together the milk, honey and eggs.

Using a wooden spoon, stir the egg mixture into the cornmeal mixture, mixing well. Stir in the melted butter and then gently mix in the corn kernels. Pour the batter into the prepared pan. Bake until the center is firm to the touch, 18-20 minutes. Cut into squares and serve hot.
