CRAB AND SHRIMP APPETIZER BALLS

1 cup Rice Krispies cereal, crushed
2 tbsp Parmesan cheese


Crab Balls
2 cups Rice Krispies cereal (uncrushed)
2 egg whites
1/2 tsp seasoned pepper and dry mustard
2 tbsp light, reduced calorie mayonnaise
1 tbsp finely chopped cilantro
2 tbsp finely chopped green onions
1/4 tsp liquid pepper sauce
1/4 cup finely chopped celery
1 (6 oz) package frozen crab, thawed, finely chopped
4 ounces cleaned, raw shrimp, finely chopped
Vegetable cooking spray

Cilantro Sauce
6 tbsp light, reduced calorie mayonnaise
3 tbsp Dijon mustard
1 tbsp finely chopped cilantro and finely chopped green onions
1/4 tsp liquid pepper sauce

Combine the crushed cereal and cheese. Set aside. In large mixing bowl, thoroughly combine remaining appetizer ingredients. Using level measuring-tbsp, shape into balls. Coat balls in crushed cereal and cheese mixture. Place on baking sheet coated with cooking spray. Spray balls lightly with cooking spray. Bake at 350 about 10 minutes or until lightly browned. Serve hot with Cilantro Sauce.

To make sauce, thoroughly combine all sauce ingredients and store in refrigerator.
