1/4 cup lightly salted sweet butter
3 cups thinly sliced sweet onion, coarsely chopped
1 tsp packed brown sugar
1/4 tsp crushed dried thyme
1 tsp dry sherry
8 oz milk goat cheese, softened
Crackers and chopped parsley

Melt butter in a skillet until golden brown, about 3 minutes being careful not to burn. Reducing the heat if necessary. Stir in onions and sugar.

Saute until tender and light golden in color, about 5 minutes; stir in thyme and sherry, cooking 1 minute longer.

Spread cheese on crackers, top with onions and sprinkle with parsley. Serve at room temperature. Makes about 48.
