CHEESE PIE SQUARES

1 medium onion and green pepper, diced
1/2 tsp paprika
1 lb Jarlsberg cheese, shredded
6 eggs, beaten
1 pimento, cut into thin strips

Preheat oven to 350. Layer onion and pepper into a well butter 8 inch square pan. Sprinkle with paprika and top with cheese.

Pour egg over all and bake for 35 minutes or until eggs are set. When cool, cut into 1 1/2 inch squares. Turn each square upside down and garnish with pimento strips and serve. Makes 24 squares

NOTE: May be baked ahead of time and reheated or served at room temperature.
