CHEESE-FILLED PEPPER RINGS

1 oz thinly sliced pepperoni
4 green onions, cut into 1 inch pieces
1 (8 oz) pkg cream cheese, softened
1/2 cup shredded provolone cheese
2 tbsp butter, softened
1 1/2 tsp Dijon mustard
3/4 tsp Italian seasoning
1/8 tsp pepper
3 medium red, yellow or green bell pepper, stemmed, deveined and seeded

Finely chopped pepperoni and green onions in food processor. Mix cheese, butter, mustard and seasonings until well combined. Mix in pepperoni mixture. Fill peppers; wrap individually in plastic wrap. Refrigerate several hours or overnight. Slice horizontally and serve. NOTE: Will keep in refrigerator up to 3 days.
