* Southern-style Cheese Spread - Cheeseball *

2 10 oz. bricks cheddar cheese, shredded
8 oz. pkg. Cream cheese, softened
1 small jalapeno, finely chopped
1 lb. bacon cooked and crumbled
l large can chopped pimento, drained and divided

Place 1/2 the pimento in a food processor and pulse until smooth. Place all ingredients in a mixer and blend until smooth. Place into a cheeseball or place in a serving dish. allow to chill about 1 hour before serving.
