Makes about 3 cups

1 tablespoon unsalted butter
2 1/2 tablespoons extra-virgin olive oil
1 large yellow onion, diced
1/2 teaspoon salt
1 teaspoon black pepper
1 teaspoon dried basil
1 teaspoon paprika
1 teaspoon dried tarragon
1 1/2 teaspoons fresh goat cheese, crumbled
2 1/2 cups sour cream


In a shallow skillet over medium heat, melt butter with olive oil; add onion and cook until translucent. Season with salt, pepper, basil, paprika and tarragon. Reduce heat to medium to medium-low, then cook and stir until onions have softened and caramelized, 10 to 15 minutes. Remove from heat and set aside to cool.

In bowl, mix goat cheese into sour cream, blending until smooth. Stir in onions. Refrigerate until ready to serve.
