Chocolate Truffle Cookies

Makes 35

4 squares (1 ounce each) unsweetened chocolate, chopped
2 cups semisweet chocolate chips (divided)
6 tablespoons (3/4 stick) butter
3 eggs
1 cup granulated sugar
1 1/2 teaspoons vanilla extract
1/2 cup flour
2 tablespoons unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
Powdered sugar


In microwave or in metal bowl set over a pan of simmering water, melt unsweetened chocolate, 1 cup of the chocolate chips and the butter, stirring occasionally, until smooth. Remove from heat and set aside to cool.


In large bowl, whip or beat eggs and sugar until thick and pale, about 2 minutes. Stir in vanilla and cooled chocolate mixture until well mixed.


In another bowl, combine flour, cocoa, baking powder and salt; gradually stir into chocolate mixture. Fold in remaining 1 cup chocolate chips. Cover dough and chill for at least 1 hour.


Preheat oven to 350 degrees.


Form chilled dough into 1-inch balls. Place on ungreased cookie sheets 2 inches apart.


Bake in preheated oven 9 to 11 minutes. Let cook on baking sheets 5 minutes before removing to a wire rack to cool completely. Dust with powdered sugar.
