Picnic Pie

Makes 8 to 10 servings

Frozen pizza or bread dough, thawed and risen (or favorite recipe)

Filling:
2 cups ricotta cheese
2 cups grated mozzarella cheese
1/2 cup grated Romano cheese
1/2 cup grated Parmesan cheese
1 scant cup finely diced salami

In mixing bowl, combine flour filling ingredients for the cheese-salami filling.

Preheat oven to 350 degrees.

Cut dough in half. On lightly floured surface, roll out each half into an 11-inch circle.

Place 1 round in a 9- or 10-inch pie plate. Fill with cheese mixture. Top with other round. Crimp edges to seal.

Bake in preheated oven 1 hour.

Note: This is great for tailgating as it will stay warm for hours wrapped in a double layer of foil and is also good at room temperature. The instant yeast dough travels well and is lower in fat and calories than traditional pie pastry.
