Caramel Cashew Summer Fruit Salad

Makes 6 to 8 servings

1 cup red grapes
1 cup green grapes
1 cup blueberries
1 cup sliced pitted cherries
4 ounces cream cheese, room temperature
8 ounces plain yogurt
1/3 cup granulated sugar
1 cup coarsely chopped cashews (divided)
1/2 cup caramel bits
1/2 cup packed brown sugar

Wash and rinse fruit.

In bowl, mix cream cheese, yogurt and sugar. In a separate bowl, mix fruit, 1/2 cup cashews and the caramel bits. Pour yogurt mixture over and stir together. Cover and refrigerate at least 1 hour.

When ready to serve, make topping: Mix brown sugar and remaining 1/2 cup cashews. Sprinkle on top of salad (or individual servings).

Note: Light vanilla yogurt can be used in place of plain yogurt. Eliminate granulated sugar.
