GINGER STUFFED PORK LOIN

1 (2 1/2 - 3 lb) boneless pork loin roast
3 tsp minced fresh ginger
3 cloves garlic, peeled and thinly sliced
1-2 tbsp olive oil
1/3 cup minced onion
2 tbsp minced fresh parsley
1/2 tsp salt and pepper
Cayenne pepper, to taste

Preheat oven to 32 Place roast on a cutting board. If roast is tied, do not untie. Cut 1/2 deep slits all over surface of roast and insert some of the fresh ginger and sliver of garlic in each slit. Rub roast with oil. Place roast on a roasting rack in a shallow pan.

In a small bowl, stir together onion, parsley and salt and pepper, sprinkle liberally over the roast. Roast meat, uncovered, 45-60 minutes or until meat thermometer registers 150 degrees, basting occasionally with pan juices.

Remove roast from oven, cover loosely with foil and let stand 10 minutes while the temperature of the meat rises to 160. Remove strings from roast. Carve into thin slices. Serves 6-8
