1/2 cup berries such as cherries, blueberries or raspberries
1 tbsp sugar
30 Mini Phyllo Shells (2 pkg)
4 oz. cream cheese, softened
1 tsp flour
3 tbsp sugar
1 egg
2 tsp lemon juice
1/2 tsp lemon zest
1 tsp vanilla extract

Using an electric beater, cream together the softened cream cheese, flour and sugar. Add egg, lemon juice, lemon zest and vanilla. Blend to combine well. Wash berries, toss with sugar. Chill until ready to use. Place Athens Mini Phyllo Shells into miniature tart pans. Spoon 2 tsp filling into each shell. Bake in preheated 325 oven 10-12 minutes. Top Petite Cheesecakes with 1/2 tsp sweetened berries. Garnish with fresh mint leaves. Makes 30 Mini Shell Desserts
