SOUTHWEST SCHNITZEL

Category: Pork - Chops and Steaks

2 lb. pork cubed steaks, cut into serving size pieces
1/3 cup flour
3 tbsp. cornmeal
-3 tsp. chili powder
1 tsp. salt
1/4 tsp. black pepper
2 eggs, beaten
2 tsp. oil
8 thin slices Monterey jack cheese
Garnish: sliced avocado, sour cream and salsa

Preheat oven to 350. Combined dry ingredients and seasonings. Dip cubed steaks in eggs then in seasoned flour. Heat oil in a skillet and brown cubed steaks on each side and place in a 13x9 inch baking pan. Cover with foil and bake for 30 minutes or until tender. Top each steak with cheese slice and bake 3 minutes longer. Serve with garnishes. Serves 4-6
