Guinness Grilled & Smothered Rib Eye

2 Rib eye steak (12-14 ounce each)
4 garlic cloves
2 teaspoon shallots
2 tablespoon Vidalia onion
1/2 teaspoon Tarragon fresh
1/2 teaspoon parsley
2 teaspoon Worcestershire sauce
2 teaspoon Dijon mustard
8 ounces Guinness room temperature
4 TBS Tamari or soy sauce
1/4 teaspoon black pepper coarse grind
1/4 teaspoon salt

Finely chop garlic, shallot, onion, tarragon and parsley and place in a bowl - add Worcestershire, Dijon, Guinness, Tamari or soy sauce and seasonings then mix well to combine. Let stand for 30 minutes to blend flavors.

Place the rib eye in the marinade and make sure it is well coated. Cover the bowl and place in the refrigerator at least 30 minutes.

Preheat a medium grill. Strain marinade and place in a saucepan on stove, reducing until slightly thickened.

Grill steak as desired and serve with sauce - Serves 2-4
