1 lb. bulk sausage
1 large onion, chopped
8 eggs, beaten
3 tbsp. flour
1 cup sour cream
6 green onions, chopped with some of the green
1 tsp. dried sage
1 tsp. dried thyme
1/2 tsp. lemon pepper
1/2 cup milk
2 cups frozen shredded hash brown potatoes, defrosted
1 1/2 cups grated mild cheddar cheese

Preheat the oven to 325 and coat with non-stick cooking spray in a 13x9 inch baking dish. Saute the sausage and onion until sausage is no longer pink. Drain the sausage in a colander and cool.

In a large mixing bowl, beat together the eggs, flour, sour cream, green onions, sage, thyme, lemon pepper and milk, until blended. Fold in the cooled sausage mixture, potatoes, and 1 cup of cheese. Pour into prepared pan and sprinkle with the remaining cheese and bake for 25 to 35 minutes, until puffed and golden brown. Serves 10 Note: Can be make night before and stored covered in refrigerator before baking.
