Greek Style Shrimp Scampi

2 tablespoons olive oil
4 cloves garlic, minced
1 pound large fresh shrimp, peeled and deveined (tails left on)
1 (14.5-ounce) can diced tomatoes with basil, garlic, and oregano
1 (14-ounce) can quartered artichoke hearts, drained and chopped
1 (2.25-ounce) can sliced black olives, drained
2 tablespoons chopped fresh parsley
1/2 teaspoon crushed red pepper
1 (12-ounce) box bow tie pasta (farfalle), cooked according to package directions and kept warm
Garnish: chopped fresh parsley

In a large skillet, heat olive oil over medium-high heat. Add garlic, and cook for 30 seconds. Add shrimp, in batches if necessary, and cook for 1 minute per side. Remove shrimp from skillet; set aside, and keep warm. Add tomatoes, artichokes, olives, parsley, and red pepper to skillet. Bring to a boil; reduce heat, and simmer for 4 minutes. Return shrimp to skillet, and simmer for 1 minute. Serve over hot cooked bow tie pasta. Garnish with fresh parsley, if desired.
