SMOKY HONEY-PEPPERCORN GLAZED CHICKEN

Glaze
1/3 cup honey
1 tbsp. ketchup
1/2 tsp coarsely ground pepper
1/4 tsp liquid smoke
1/8 tsp salt and crushed red pepper flakes

1 whole chicken, rinsed and dried

In a bowl, combine glaze ingredients. Place chicken in a roasting pan. Brush with glaze. Roast at 350, brushing with additional glaze every 15 minutes until chicken is deep-golden brown and chicken juices run clear, about 1 hour to 1 hour and 15 minutes.
