Chicken Penne With Tomato Garlic Cream Sauce

Ready in: < 30 minutes
- 1 pound penne pasta
- 2 tablespoons butter
- 1 onion, sliced
- 1/2 teaspoon red pepper flakes
- 2 cloves garlic, minced
- 2 pounds roma tomatoes, chopped
- OR
- 1 can (28 ounce size) diced tomatoes, drained
- 2 cups whipping cream or half and half
- 1 cup frozen peas
- 1/2 teaspoon salt
- black pepper
- 2 pounds chicken, cooked and shredded
Prepare pasta according to directions until al dente. Drain, reserving 1/2 c. liquid. Saute onion and red pepper in butter in skillet 3 minutes. Stir in garlic and cook 1 minute. Stir in tomatoes, cream and pasta liquid. Cook on high for 4 minutes until slightly reduced. Stir in peas, salt, pepper, pasta and chicken. Serve
