HONEY GARLIC CHICKEN IN THE INSTANT POT

Ingredients:
1/3 cup honey
4 cloves garlic, minced
1/2 cup low sodium soy sauce (see notes for alternatives)
1/2 cup no salt ketchup
2 tablespoon of rice wine vinegar
1/2 teaspoon dried oregano
2 tablespoons chopped fresh parsley
1 tablespoon sesame seed oil
4 to 6 bone-in, skinless chicken thighs
salt and fresh ground pepper, to taste
1/2 tablespoon toasted sesame seeds, for garnish
sliced green onions, for garnish
Instructions:
In a small mixing bowl combine honey, minced garlic, soy sauce, ketchup, rice wine vinegar, oregano and parsley; mix until well combined and set aside.
Saute chicken thighs in Fry Pan or in the Instant Pot in saute mode. Add the sesame oil to the pot or fry pan. Season chicken thighs with salt and pepper; arrange in the instant pot and cook for about 2 to 3 minutes per side. Put chicken aside in a dish and cover to keep warm.
Add the prepared honey garlic sauce to the pot; put in trivet to elevate chicken above liquid and add the chicken thighs back; cover and lock the lid and close pressure release valve by putting it in the closed position on the Instant Pot.
Press Manual button and set for 10 minutes for cooking time. The pot will pressurize and cook the chicken in the liquid for 10 minutes.
Make cold water cornstarch slurry to be used as a thickening agent in a small cup. It will be used in the final step before serving.
Either manual release pressure after a couple minutes or wait about 10 minutes for a natural release of pressure and then open pressure release valve.
Open Instant Pot and add cold water cornstarch slurry and stir to thicken sauce. The residual heat will keep things hot.
Remove Honey Garlic Chicken from pot and serve over rice. You did make rice?
