Italian Grandma Makes Meatless Meatballs (Polpette di Pane)

MEATLESS MEATBALLS (Polpette di Pane)

You mix the eggs and other ingredient below in a large bowl and mix well. Refrigerate to thicken and marry the ingredients. Once the Meatball Mix has set somewhat, you make into round meatballs in your hands or a spoon and drop them one by one directly into a hot fry pan that is covered with 1/4 inch of Olive Oil. Cook to golden brown on both sides and drain of paper towels.

Meatless Meatball Mix:
6 Extra Large Eggs
½ cup Fresh Parsley, chopped
1 cup Breadcrumbs
1 cup Pecorino Romano Cheese, grated
½ tsp Salt
¼ tsp Pepper

Sauce/Gravy:
Olive Oil
½ cup Onion, chopped
3 cloves Garlic, chopped
2 qts Tomato Puree
8-10 Fresh Basil Leaves
Salt & Pepper
