Salmon with Crispy Skin by Spain on a Fork

Use a non-stick fry pan on medium-high heat.
You need to make sure the salmon is completely dry, especially the skin side.
Rub the the salmon all over with Olive Oil and season with Sea Salt and Freshly Ground Black Pepper.
Place the Salmon skin side down in the fry pan.
After about 4 minutes, flip the salmon to the other side.
Cook on the other side for about 2 more minutes or until perfectly cooked to your taste.
Put on a plate with skin side up, so it doesn't get soggy on the plate.
If you want to make the green parsley sauce, combine 2 TBS Olive Oil, 1 clove of finely grated garlic, & 2 TBS of finely chopped parsley. Season with Sea Salt and whisk together.
You can also serve this dish with a sauce made of 1/2 part your favorite mustard and 1/2 part mayonnaise.
