Un-stuffed Cabbage

2 pounds lean ground beef or turkey
2 med. onions, chopped
1 small head cabbage, chopped
(Too much cabbage will overpower the meal and leave it tasting bland)
2 (14.5 ounce) cans Del Monte diced tomatoes w/ Jalapenos
12 ounces tomato sauce, prepared marinara, or prepared arabiatta sauce for an extra kick.
1/2 cup water
6 or more cloves of garlic, minced
2 teaspoons salt
1 teaspoon ground black pepper
Crushed red pepper to taste
DIRECTIONS:
Heat a Dutch oven or large skillet over medium-high heat. Cook and stir beef and onion in the hot Dutch oven until browned and crumbly, 5 to 7 minutes; drain and discard grease if you like. Clear an area in the middle of the pot, add garlic and saute until fragrant (1-2 minutes) add cabbage, tomatoes, tomato sauce, water, salt, red pepper, and black pepper and bring to a boil. Cover Dutch oven, reduce heat, and simmer until cabbage is tender, about an hour.
