Oven Roasted Citrus Chicken

12 Chicken Drumsticks (or you can use thighs, wings etc)
1/4 Cup of Olive Oil
Juice of 1 Large Lemon
Juice of 1 Orange
1 Tablespoon of Mixed Dried Italian Herbs
1/4 Teaspoon of Dried Chilli Flakes
1/2 Teaspoon of Smoked Paprika
2-3 Cloves of Garlic (minced - about 3 to 4 teaspoons)
1 Large Lemon (sliced)
1 Orange (sliced)
2 Small Red Onions (peeled and quartered)
Salt and Pepper

Mix from oil to minced garlic. Pour a little in pan big enough to hold drumsticks in one layer. Pour remaining over chicken and arrange the sliced lemon, orange and onion around pieces.

Bake at 400 until done.

SERVES 6 - 8
