Oven Baked Mashed Potato Cakes

1 3/4lbs potatoes peeled and rinsed
2 eggs
2 tbls minced onion
salt n pepper
1 cup diced ham
2 tbls butter
2 tbls milk
2 tbls chives minced

4 tbls breadcrumbs or panko

Cook potatoes in salted water
Cook onion until translucent
In a large bowl combine all (except bread crumbs) and mix. Adjust milk if needed.

Oven 400. Baking sheet lined with parchment paper.
Form potatoe in a 1 to 1 1/2 inch high small cake shape using a ring form or coffee cup. sprinkle breadcrumbs add potatoe top with more of breadcrumbs.

Bake for 10 min or until golden. Serve warm

Can top with a little grated parmesan cheese.
