mexican "stuffed bell pepper"casserole

1 pound cooked ground beef
4 cups of cooked white rice
1/4 cup cooked wild rice(optional)
1 can drained corn
1 can drained and rinsed black beans
1 diced green bell pepper
1 diced red bell pepper
3 packages of "old el-Paso" taco seasoning mix (or your favorite kind)
1 cup water
1 cup extra sharp cheddar cheese, shredded, divide out 1/4
1 cup mozzarella cheese, shredded, divide out 1/4

Mix all ingredients, except the 1/4 cheeses, and mix well into a large casserole dish. Top with the 1/4 reserved cheeses. Bake in pre-heated oven at 350 degrees F. For 25 minutes or until beans are heated through. Garnish with any of the following: diced tomatoes, parsley, pimentos, green onions, or try all together for extra hearty dish! Serve with dinner salad and salsa!

Variation: leave out red bell peppers, and use the mix to stuff inside the red bells. Bake the same!
