campfire chicken and potatoes

Chicken breast halves. (1-2 per person)
Sliced green bell peppers (1/4 per person)
Sliced red bell peppers (1/8 per person)
Sliced yellow onions. (1/4 per person)
Quartered russet potatoes (1 small-medium per person)
Diced garlic (1 clove per two persons)
1/2inch of water in bottom of cast iron Dutch oven
Salt and pepper to taste.
1 small sprig each, crushed, thyme, rosemary and parsley ( or you can use 1/4 tsp. Per two persons.)

Get fire/grill going to medium heat. Place water into Dutch oven. Cut chicken breast halves into cubes or bite size pieces, salt and pepper all sides, place into Dutch oven. Place sliced bells, onions, potatoes, garlic, and herbs in next. Add additional salt and pepper to taste. Stir gently to mix. Cook over medium heat for 30 minutes or until chicken is no longer pink and potatoes can be easily pierced with a fork.
Serve with a crusty French bread and a side salad.
