Marinade - Sweet Chili Sauce

boneless pork chops (about 2 lbs)
1/2 cup sweet chili sauce
1/3 cup vegetable oil
2 cloves garlic, minced
2 Tbsp fish sauce, or 1 1/2 Tbsp soy sauce
1 Tbsp apple cider vinegar
1 Tbsp soy sauce
1 tsp garlic powder
1/2 tsp ground ginger
***Reserve some sauce for basting***
1. In a large gallon-size Ziploc bag, combine the sweet chili sauce, oil, garlic, fish sauce, vinegar, soy sauce, garlic powder and ginger. Add pork chops and seal, pressing out any air. Shake the bag around until pork chops are all coated in the sauce. Refrigerate pork chops for at least 3 hours or overnight.
2. Preheat a grill over medium high heat. Add pork chops and cook for about 4-5 minutes per side until an internal temperature reaches 135 degrees. Let rest for 10 minutes before serving.
