Chops - Baked With Onion Gravy

3 pork chops, bone in
1/2 tsp salt
1/4tsp black pepper
1 onion, chopped julienne
1 1/2 cups beef broth
1 tsp sugar
2 Tbsp vegetable oil
1 tsp butter
1 Tbsp flour


1. Season the chops with salt and pepper.
2. Heat up 1 Tbsp oil in a pan, add the chops and sear on both sides for 3 minutes until brown (won't be cooked through yet)
3. Preheat oven to 400 degrees and bake chops 20 minutes or until cooked through.
4. To make gravy, heat up the remaining oil with butter, add the onion and fry gently on a low to medium heat until translucent.
5. Add the sugar and flour, give it a good stir, then pour in the broth, and whisk until it thickens into a sauce.
6. Season to taste with salt and pepper.
7. When chops are ready, add them to the gravy.
8. Serve hot with mashed potatoes and garnish with parsley.
