Jambalaya - Chicken

3 large onions
1 1/2 Tbsp garlic powder
1 1/2 Tbsp Cajun or Tony Chachere's seasonings
1 tsp Louisiana Hot Sauce
3 cups raw long grain rice
1 chicken
6-8 cups water
1/3 cup cooking oil
salt to taste


1. Fry chicken in oil until brown. Remove from pot.
2. Add onions and garlic to same pot and fry until brown.
3. Return chicken to pot, add water, salt, hot sauce, seasonings and simmer until tender.
4. Add rice, cook rapidly for 5 minutes, then lower heat, cover and cook for 30 minutes, or until done...without lifting lid.
