Fudge - Eggnog

2 cups sugar
1 cup eggnog
1 Tbsp light corn syrup
2 Tbsp butter + 2 tsp butter
1 tsp vanilla
1/2 cup walnuts, chopped
2 Tbsp semisweet chocolate pieces
1. Butter sides of 3 quart saucepan. Combine sugar, eggnog and corn syrup. Cook over medium heat, stirring constantly, until sugar dissolves and mixture comes to a boil. Cook to a soft ball stage of 235 degrees, stirring only as necessary.
2. immediately remove from heat and cool to lukewarm 110 degrees, without stirring!
3. Add 2 Tbsp butter and vanilla. Beat vigorously until fudge becomes very thick and starts to loose its gloss.
4. Quickly stir in the nuts. Spread in buttered 8x4x2 pan.
5. Combine chocolate pieces and remaining butter, heat till melted and drizzle over top of fudge. Score in squares while firm and cut when cool and firm.
