Sauce - Roasted Garlic Aioli

1 head garlic
2 tsp olive oil
kosher salt and ground black pepper to taste
1/2 cup mayo
1 tsp lemon juice
1/2 tsp Worcestershire sauce
pinch of ground cayenne pepper
1. Preheat the oven to 350 degrees.
2. Trim off the top of the head of garlic to expose the cloves. Drizzle with olive oil. Sprinkle salt and pepper on top. Wrap completely in aluminum foil.
3. Bake in oven for about 1 hour till garlic feels soft when lightly pressed.
4. Unwrap and let sit at room temperature for about 10 minutes.. Refrigerate until completely cooled, about 1 hour.
5. Pull out individual cloves with a sharp knife; place in a bowl; mash with a fork until creamy. Mix in mayo, lemon juice, Worcestershire sauce and cayenne until well blended. Refrigerate till flavors combine ..At least 1 hour up to 24 hours.
