Cajun Potato Salad

3 lbs red potatoes, cut in bite sized pieces
3-4 celery stalks, chopped
6 hard boiled eggs, chopped
2 green onions, sliced
***For the Dressing:
1½ tsp smoked paprika
¼ tsp cayenne
½ tsp garlic powder
¼ tsp onion powder
½ tsp thyme
½ tsp oregano
1 ⅓ cup Mayo
⅓ cup sour cream
1 Tbsp apple cider vinegar
2 Tbsp Dijon mustard
½ tsp sea salt
½ tsp cracked pepper


1. Add potatoes to a pot and add water just to cover the potatoes. Add up to 1 teaspoon of salt to the water when it begins to boil. Boil for about 12-15 minutes or until they are just soft enough for a fork to pierce them. Drain and set aside allowing the potatoes to cool slightly.
2. Whisk together all of the dressing ingredients. Adjust seasoning to taste as desired.
3. When potatoes have cooled enough so they are not hot to touch, add the potatoes, eggs, celery and onion to a large bowl. Toss with ⅔ of the Cajun dressing and coat evenly.
4. Chill for at least 30 minutes before serving and up to 24 hours. Toss with remaining dressing just before serving and garnish with chopped parsley and a sprinkle of paprika.
