Candy - Leather (Roll-Ups) Fruit

Fruit, ripe or overripe
1 Tbsp lemon or lime juice (yellow or light colored fruit only)
heavy plastic wrap
Fruit leather is a pureed fruit dried on heavy plastic wrap.
***Any ripe or overripe fruit can be used***
1. Remove the pits or seeds from the fruit. Seeds of berries and grapes do not need to be removed. Peeling the fruit is optional.
2. Cut fruit into chunks and place in a blender to puree. For light or yellow colored fruit, add 1 Tbsp lemon or lime juice. Add honey for sweetness or any other spice, if desired.
3. Line cookie sheet with heavy plastic wrap. Pour the puree onto the cookie sheet about 1/4" deep. Tilt tray to distribute evenly. Do Not Use spatula or knife to smooth.
4. Drying time depends on method used. Sun drying takes 2-3 days, depending on temp and humidity. Bring inside each night between drying days. To oven dry; set oven at lowest setting and leave door cracked for 4-5 hours to dry.
5. To test for doneness, lift plastic wrap from a corner of candy. If it peels readily, and the roll-up is sticky to the touch, it is dry. Now just roll in wax paper and store in plastic bag. Stores in freezer for years, in the refrigerator for months, or room temp for 2 months.
