Baked Chicken Bacon Ranch

4 boneless chicken breast
1 1/2 cups Ranch dressing
1/2 cup sour cream
1 1/2 cups grated parmesan cheese divided
Kosher salt
Fresh grated black pepper
1/4 cup cooked bacon crumbles
parsley for garnish
1. Preheat oven to 375 degrees. Spray 8" x 11" baking dish with cooking spray.
2. Pound breast to a even 1" thickness.
3. Sprinkle both sides of meat with half the grated cheese, salt and pepper. Place chicken in prepared baking dish.
4. In a medium bowl, whisk together ranch and sour cream. Pour the mixture over the chicken and sprinkle with remaining cheese.
5. Bake for approx. 30 minutes until meat thermometer reads 150 Degrees.
6. Set oven to broil and broil breast for an additional 3-5 minutes or until chicken turns golden. It will burn quickly, so keep an eye on it.
7. Chicken is cooked through when thermometer reads 160 degrees at thickest part of breast. Remove from oven and sprinkle with cooked bacon crumbs. Allow the chicken to rest a few minutes and garnish with parsley before serving.
