Steak - Top Sirloin Filet

2 Top Sirloin Filet steaks
high heat cooking oil (sunflower, grape seed)
kosher salt and fresh ground black pepper to taste


1. Place steaks on a plate and liberally season with kosher salt. Allow them to come to room temp before cooking, about 30 minutes.
2. Preheat oven to 500 degrees
3. Coat a cast iron skillet or oven safe pan with a coat of oil. Place over high heat. When hot, place steaks on leaving room in between them.
4. Sear for 2 minutes, then flip and sear for another minute.
5. Immediately place in oven. Allow 3-5 minutes for steaks to finish or until they are an internal temperature of 5 degrees below your final temperature (120 for rare, 130 for med-rare, 140 for medium, 150 for med-well and 160 for well done).
6. Allow steaks to rest on a plate for 5 minutes before cutting.
