Au Gratin Potatoes

1 medium onion, chopped
1/4 cup butter
1 Tbsp flour
1 tsp salt
1/4 tsp black pepper
2 cups milk
2 cups shredded Cheddar cheese, divided use
6 medium potatoes, scrubbed
1/4 cup dry bread crumbs
paprika, optional


1. Preheat the oven to 350 degrees F.
2. Combine the onion and butter in a saucepan over medium-high heat. Cook, stirring frequently, until the onion is tender.
3. Stir the flour, salt, and pepper into the saucepan. Reduce the heat to low and cook, stirring constantly, until the flour mixture is bubbly. Remove the pan from the heat. Stir in the milk and 1 1/2 cups of the Cheddar cheese. Return the pan to the heat and increase it to medium-high. Cook, stirring constantly, until the sauce is bubbly and starts to thicken.
4. Remove the pan from the heat and set aside.
5. Skin the potatoes and cut them into thin slices. Place the potatoes in an ungreased 1 1/2 quart baking dish. Pour the cheese sauce evenly over the potatoes.
6. Place the baking dish in the oven and bake uncovered at 350 degrees F for 1 hour.
7. Combine the remaining cheese and bread crumbs and sprinkle evenly over the top of the potatoes. Sprinkle lightly with paprika, if desired.
8. Return the potatoes to the oven and bake for 15-20 minutes more or until the cheese is melted and browned and the sauce is bubbly.
