Hash Brown Casserole - Cracker Barrel

1/2 cup butter, melted
1 tsp salt
1/2 tsp black pepper
1/2 cup finely chopped onion
1 can (10.75 oz) cream of chicken soup, undiluted
2 cups shredded Colby cheese
2 lbs frozen hash brown potatoes, thawed
1. Preheat the oven to 350 degrees F. Grease a 9" x 13" baking dish.
2. In a bowl, combine the melted butter, salt, pepper, onion, soup, and cheese until well mixed. Gently stir in the thawed hash brown potatoes.
3. Pour the potato mixture into the greased baking dish. Place in the oven and bake, uncovered, at 350 degrees F for 35 minutes or until the potatoes are cooked through and the casserole is bubbly.
4. Let cool for 2-3 minutes then serve.
