Cookies - Snowballs

3/4 cup unsalted butter, softened
1/4 cup unsifted confectioners sugar
1/3 cup sugar
1 tsp vanilla extract
1/3 cup yellow cornmeal
1 3/4 cups all-purpose flour
1/4 tsp salt
confectioners sugar, for finishing cookies


1. Adjust rack to the lower third of oven and preheat to 350 degrees.
2. Cream the butter, sugars and vanilla until smooth.
3. In a separate bowl mix together the cornmeal, flour and salt.
4. Combine the dry ingredients with butter mixture to form a soft dough.
5. Shape into 1" balls (about 1 1/2 tsp of dough per cookie) and space about 1 1/2" apart on large parchment-lined backing sheet.
6. Bake for 12 to 15 minutes, or until bottoms are lightly colored.
7. While cookies are still warm on the baking sheets, sprinkle them with confectioners sugar through a small sieve.
8. When thoroughly cool, dredge them in confectioners sugar for a second coating.

***Snowball cookies have a delicate crunch due to the addition of cornmeal***
